Carolina Wonder Sweet Pepper, Organic, Nematode-Resistant Pepper

The Carolina Wonder is a triumph of modern public plant breeding. It was developed by the USDA’s Agricultural Research Service (USDA-ARS) at the U.S. Vegetable Laboratory in Charleston, South Carolina, and released in the late 1990s.

Breeding specialists Richard L. Fery and Judy A. Thies recognized that home gardeners in the South were losing entire crops to Root-Knot Nematodes (RKN)—microscopic soil-borne pests that attack plant roots. Unlike many modern pest-resistant varieties that are hybrids (F1), the Carolina Wonder was released as an open-pollinated variety. This was a gift to the gardening community, as it allowed growers to save their own seeds year after year while maintaining that vital, life-saving resistance. It remains the gold standard for organic nematode management in the vegetable garden.

1. Starting Indoors:
Peppers are heat-lovers and have a long growing season. Start seeds indoors 8–10 weeks before the last frost. Use a heat mat to keep soil temperatures between 75–85°F for the best germination.

2. Transplanting:
Wait until the soil is thoroughly warm and nighttime temperatures are consistently above 60°F. Space plants 18–24 inches apart in rows.

3. Soil & Fertilization:
While this variety resists nematodes, it still appreciates rich, well-draining soil with plenty of organic matter. Use a balanced organic fertilizer at planting time and avoid high-nitrogen feeds once the plant begins to flower, as this can lead to "all leaves and no fruit."

4. The "Southern" Advantage:
If you live in a region with sandy soil (where nematodes thrive), the Carolina Wonder is your best defense. For maximum protection, practice crop rotation and plant these where you previously grew nematode-susceptible crops like tomatoes.

5. Harvesting:

• Green: Harvest early for a slightly more savory, "tangy" bell pepper flavor.
• Red: Leave them on the plant until they turn fully red for maximum sweetness and vitamin C content.
