The secret to a successful endive harvest is knowing which variety fits your kitchen goals. Choose our Curly Endive (Frisée) varieties for their delicate, lacy leaves that add incredible volume and a sharp, refreshing bite to fresh plates. If you prefer a milder, sturdier green that excels in both salads and traditional Italian soups, our Broad-leaf Endive (Escarole) varieties offer thick, succulent leaves and a buttery heart. - Planting Window: Direct sow as soon as the soil can be worked in spring, and again in mid-to-late August for a fall harvest.
- Days to Maturity: 45–60 days for baby greens; 80–90 days for full-sized, blanched heads.
- Hardiness: Extremely frost-tolerant; mature plants can survive temperatures down to 25°F with minimal protection.
- Soil Preference: Prefers well-drained, fertile soil rich in nitrogen with consistent moisture to prevent premature bolting.
- Expert Tip (The Blanching Secret): If you find endive too bitter, try "blanching" the heart. Two weeks before harvest, pull the outer leaves up and over the center of the plant and secure them with a rubber band. By blocking the sun, you stop chlorophyll production in the center leaves, resulting in a creamy-white, much sweeter, and more tender heart!
