While many Agastache species are native to North America, Agastache rugosa is a storied traveler from East Asia, specifically Korea, China, Japan, and parts of Russia.

Historically, it is one of the "50 Fundamental Herbs" in Traditional Chinese Medicine, where it has been used for centuries to support digestive health and cooling the body. In Korea, it is known as Baecho-hyang and is a culinary staple, often used to flavor traditional soups (chuotang) and stews for its unique, savory-sweet aromatic profile. It earned the name "Giant Purple Hyssop" in Western gardens during the 19th century as plant explorers sought out rugged, vertical perennials that could withstand cold winters while providing a lush, mint-family aesthetic.

1. Sowing the Seeds:
Agastache rugosa seeds are small and require light to germinate.

• Indoors: Start seeds 6–8 weeks before the last frost. Surface-sow onto a moist seed-starting mix and press down gently. Do not cover with soil.
• Outdoors: Direct sow in late spring after the soil has warmed.
• Germination: Expect sprouts in 10–15 days at temperatures of 65–70°F.

2. Choosing the Best Spot:
Giant Purple Hyssop loves Full Sun but is remarkably adaptable to Partial Shade, especially in hotter climates. While it prefers moist, fertile soil, the most critical factor is drainage—it will not tolerate standing water during the winter.

3. Maintenance:

• Spacing: Thin or transplant seedlings to 18–24 inches apart. These plants grow into impressive, multi-stemmed clumps.
• Watering: Water regularly until established. Once mature, it is moderately drought-tolerant.
• Pinching: To encourage a bushier habit, pinch the growing tips when the plant is 12 inches tall. This will result in even more flower spikes!

4. Harvesting:

• For Tea: Harvest leaves in the morning after the dew has dried but before the sun is at its peak for the highest oil content.
• For Bouquets: Cut the flower spikes when the bottom 1/3 of the flowers have opened.
