Hollow Crown Parsnip, 1800's Heirloom, Seed Savers Exchange - This popular heirloom parsnip variety produces long (up to 15”), smooth, white roots with a sweet, nutty flavor that intensifies after exposure to frost. The roots can be roasted, sautéed, mashed, or puréed and used in stocks, stews, and pot roasts. Also, a good storage variety, ‘Hollow Crown’ can last up to six months in a root cellar.‘Hollow Crown’ is one of the oldest parsnip varieties still being grown today. The Chicago Botanic Garden describes it as “a venerable variety known before 1825.” The name “Hollow Crown” refers to the variety’s characteristic dip at its shoulders, an indented crown.

Instructions - Deep, loose, well-drained fertile soil with moderate nitrogen levels is best.
