Lambada Pole Bean: The Danish Shelling & Dry Bean

At Firefly Farm & Mercantile, we take pride in offering varieties with a verified "paper trail." The Lambada Pole Bean is a stunning Danish heirloom that stands out for its unique genetics and artistic appearance. This is a specialist variety, grown exclusively for the high-protein, buttery seeds hidden within its protective pods.

This variety shone in our 2025 summer trial garden in Wisconsin. The vines grew quickly and the pods were extremely decorative as they ripened.  Planting 10' yeilded 5 pounds of dried beans

📜 Documented History & Provenance

To ensure our customers grow true heritage crops, we have traced the Lambada to its original European sources:

  • Danish Seed Savers (Frøsamlerne): This variety is officially preserved by Frøsamlerne, the national seed-saving organization of Denmark. It is recorded as a traditional Danish stangbønne (pole bean) bred for the cool, maritime climate of Scandinavia.
  • The Seed Savers Exchange (SSE): The Lambada was introduced to North American gardeners in the 1990s through the SSE. It was formally cataloged by members as a "Danish Pole Bean," noted for its reliability in northern growing zones. Our seeds come from a longtime SSE member.
  • International Heritage Catalogs: Renowned UK heritage seed specialists, such as Real Seeds, cite the Lambada as a premier "Danish shelling bean," specifically highlighting that it was bred for a climate where beans must mature quickly and reliably before the onset of autumn frost.

Why the name "Lambada"? While its original Danish name is a piece of local family history, it was named "Lambada" by international seed historians to describe the "energetic" and "dancing" swirls of purple and maroon on the creamy-white seeds.

🥣 Culinary Profile: A "Pure" Shelling Bean

Important Note: The Lambada is not a snap bean. Its pods are tough and fibrous, designed to protect the developing seeds.

  • The Fresh "Shelly" Stage: Harvest when the pods are lumpy and leathery. These fresh-shelled beans are a gourmet delicacy—creamy, tender, and far superior to any store-bought dried bean.
  • The Dry Bean Stage: Left to fully mature on the vine, the seeds turn into hard, beautiful jewels. They feature a high-contrast painted pattern of royal purple on a white background.
  • Flavor & Texture: Lambada beans are known for their "melt-in-your-mouth" consistency. They have a rich, savory, and slightly nutty flavor, making them the perfect centerpiece for traditional Danish soups or hearty winter stews.
🌿 Garden Performance

Because of its Nordic origin, the Lambada is a "workhorse" for the northern gardener. It is exceptionally hardy and can handle temperature fluctuations that often stress more delicate varieties.

✨ Why We Feature It

"The Lambada is a masterclass in functional beauty. It was bred for survival in the short summers of Denmark, resulting in a bean that is both exceptionally productive and visually spectacular. It is a true 'homesteaders' bean—reliable, nutrient-dense, and deeply connected to its Nordic roots."

👨🌾 Harvest Tips for the Mercantile Gardener

To get the most out of your Lambada crop, wait for the pods to lose their bright green color. For dry beans, allow the pods to stay on the vine until they feel like dry parchment and the seeds inside are rock-hard. If you harvest them for fresh shelling, do so when the pods are still slightly pliable but the bean shape is clearly visible through the hull.
