Music Garlic: The Popular Powerhouse

All Out for the season - our last Music orders leave 10/14 and 10/15 .

Naturally Grown Music (sometimes spelled Musik) is perhaps the most widely grown and recognized variety in the Porcelain (Hardneck) family. Named after Al Music, Canadian cab driver, who brought the variety from Italy to Canada in the 1980's. He fell in love with this garlic while visiting his family for the first time in Italy. Little did he know that it would become the "gold standard" for commercial and home growers across North America due to its immense size, high yields, and incredible hardiness.

Overview

Music is a robust hardneck variety known for its massive, satiny-white bulbs. It typically produces just 4 to 6 jumbo-sized cloves per head. These cloves are teardrop-shaped and wrapped in skins that often feature a delicate pink or purple blush. Because of its large cloves and easy-to-peel nature, it is a favorite for those who want maximum garlic impact with minimum kitchen prep.

Flavor Profile

Music is beloved for its classic, rich, and savory garlic flavor. It offers a profile that is powerful but balanced, making it suitable for a wide range of palates.

  • Initial Taste: Bright and pungent with a rich garlic aroma.
  • Heat: It delivers a medium-to-high heat when raw, providing a pleasant zing without the scorching burn of more aggressive varieties.
  • Cooked Character: Cooking mellows the heat significantly, transforming the flavor into a sweet, nutty, and savory richness that enhances rather than overpowers a dish.
Culinary Uses

Thanks to the sheer size of its cloves, Music is incredibly versatile and efficient in the kitchen.

  • General Cooking: The go-to choice for almost any recipe—from soups and stews to stir-fries. One clove is often equal to three cloves of a standard supermarket variety.
  • Roasting: Excellent for roasting; the large cloves become creamy and spreadable, offering a sweet and mild finish.
  • Slicing and Mincing: The cloves are firm and easy to handle, making them ideal for creating thin garlic chips or a fine mince.
  • Scapes: Like other hardnecks, it produces thick, delicious scapes in early summer that are perfect for making pesto or grilling whole.
Growing Characteristics

Music is legendary for its vigor and its ability to thrive in the most demanding northern climates. USDA Hardiness Zones 4-7

  1. Extreme Hardiness: It is exceptionally cold-tolerant, making it the top choice for growers in Canada and the northern United States.
  2. Plant Vigor: The plants are tall, dark green, and sturdy, often reaching heights of 3 to 4 feet.
  3. High Yield: Because the bulbs consistently grow to a large size, it offers a high "return on investment" for gardeners.
  4. Adaptability: While it loves the cold, it is quite adaptable and can perform well in a variety of soil types as long as there is adequate drainage.
Storage and Handling

One of the standout features of Music is its impressive shelf life, which is significantly longer than most other hardneck varieties.

"Music is the reliable workhorse of the garlic world; it offers the flavor and ease of a hardneck with the storage durability that lasts nearly until the next year's harvest."

  • Shelf Life: Under proper conditions, Music can store for 6 to 9 months, often lasting well into the spring.
  • Curing: Due to its thick neck and large bulbs, it requires a thorough curing process (3–4 weeks) in a dry, shaded area with plenty of air circulation.
  • Peeling: The skins are thick and protective during storage but remain loose enough to be removed easily when you are ready to cook.
